This recipe can be done by hand, but it needs some arm muscle. I would recommend making this on days when you are frustrated or have an upper body work out day. I usually make this by hand but two wonderful friends purchased me a kitchenaid stand mixer. I can’t believe how wonderful it is.
Ingredients:
3 1/2 cups of all-purpose flour
1 1/2 cups of warm water
1 tablespoon of olive oil
1 teaspoon of rapid yeast
3/4 teaspoon of salt
Directions:
- Mix all dry ingredients in a big bowl. Slowly add in only enough water, to form a ball of dough. In this same bowl, knead the dough until it becomes smooth and soft. (If you are hand kneading, you may want to divide the dough in smaller pieces and knead them separately).
- When the dough is soft, place it in a greased bowl and spray the top of the dough with cooking spray. Cover with saran wrap and let it sit in a warm place for about 1 hour.
- After 1 hour, punch down the dough and start making your pizzas (or calzones).
For my pizzas, I used about 1/2 cup of dough, homemade sauce, fresh mozzarella and basil (from my aerogarden..thank you my wonderful Mother-in-Law!!).
Enjoy!

Recipe makes about 12 small pizzas.
For my friends with Gluten Sensitivity:
Replace all-purpose flour with White Rice Flour 🙂
