Mini Chocolate Chip Cookie Pies

My birthday is coming up really soon and my husband decided to give me gifts early. I was so surprised when the packages came in today! My husband figured I would use these right away. In the packages came a brand new apron with my name on it (Blue! And I really wanted an apron!), 4 mini pie plates (ALWAYS wanted these!), Kitchen Aid paddle with scraper attached and silicon oven mitts that can be used up to 600 F!!! (My old gloves were burning). I AM SO HAPPY!!!

So, of course I went straight to my collection of recipes and selected this recipe to make in my brand new mini pie plates.

Ingredients:

A Portion of My Pastry Dough

1 egg

1/4 cup of all-purpose flour

1/4 cup of sugar

1/4 cup of brown sugar

6 tablespoons of butter, softened

1/2 cup of chocolate chips

Directions:

  1. Combine eggs, flour, sugar, brown sugar, butter and chocolate chips.
  2. Roll out pastry dough and cover a mini pie plate
  3. Scoop cookie batter into pie crust
  4. Bake at 325 F for 40 minutes or when knife inserted halfway, comes out clean

      • You are sooo right. Okay I am putting my plan into motion to have this as my 12 am dessert *we are brilliant Aquarius’s I tell you lol*. Girl you are awesome! We are so having a love fest over here and I don’t care lol. Aquarius are great, I think we would get along even if we weren’t 😉
