Cinnamon Raisin Bran Muffins

I am definitely not in the mood for eggs today. Every time my husband is home, we love making a nice big breakfast together. Most of the times, it involves eggs. Today, I wanted something different and slightly healthier. This recipe contains Bran, Whole Wheat and Oatmeal, which are high in fiber, which in turn lowers cholesterol, reduces the amount of glucose in your bloodstream at one time and many other health benefits. I want to tweak this recipe some more, to reduce the “not so healthy ingredients,” (Ex: substitute some canola oil for applesauce and reduce brown sugar) but if you eat these in moderation, they are a pretty good start for your day. I also love the fact that it makes a good on-the-go breakfast.

Ingredients:

1 1/2 cup of wheat bran

1 cup of skim milk + 1 tablespoon of apple cider vinegar

1/3 cup of canola oil

1 egg

2/3 cup of brown sugar

1/2 teaspoon of vanilla extract

1/2 cup of all-purpose flour

1/4 cup of whole wheat flour

1/4 cup of rolled oats

1 teaspoon of baking soda

1 teaspoon of baking powder

1/2 teaspoon of salt

1 teaspoon of cinnamon

1/2 cup of raisins

Extra oats to sprinkle

Directions:

  1. Preheat oven to 375F and grease cupcake molds (or line with paper cupcake liners)
  2. Combine all ingredients and stir well.
  3. Spoon batter into muffin tins and sprinkle with additional oats.
  4. Bake for 15-20 minutes or until toothpick, when inserted, comes out clean

  1. Wow I cant believe a muffin that looks so good can be healthy. Ill definitely try this to lower my cholesterol after eating a lot of those pork crackling 🙂
