Oatmeal Pancakes

Another wonderful day, when I can have breakfast with my husband.  I was in the mood for pancakes but the problem was, I wasn’t in the mood to have just plain white flour. Nothing wrong with regular pancakes but I like to sneak in some healthy. So, today I decided to sneak in some oatmeal and whole wheat. I did put in some white flour (to keep it soft). These pancakes came out delicious with a hint of nutty taste to them. I had mine with slice bananas (my favorite) and some bacon….hey..I didn’t say I was having a completely healthy breakfast. 🙂
Give these a try and I know you will enjoy them! This recipe makes 4 pancakes

 

Oatmeal Pancakes

 

 

Ingredients:

3/4 cups of quick-cooking oats

1/4 cup of whole wheat flour

1/4 cup of all-purpose flour

1/2 teaspoon of baking soda

1/2 teaspoon of sugar

1 egg

1 cup of milk

1 tablespoon of apple cider vinegar

3 tablespoons of melted butter

Directions:

  1. Combine all ingredients and mix until well blended
  2. Pour about 1/3 cup onto a greased hot skillet
  3. When bubbles form at the top, flip the pancakes
  4. Cook until both sides are golden brown

Serve with your favorite syrup or fruit!

  2. I never tried oats on pancakes before, will definitely try this one out to get away from that boring oatmeal breakfast. With this I can enjoy pancakes while having a boost for fiber.
