Mini German Pancakes

Breakfast day with my husband! Yea!!! My favorite occasion! Do you ever get in the mood to have pancakes but dread the filling heaviness that comes from eating them? That’s how I felt. I wanted something pancake-like but not as heavy. Plus, I am not a fan of syrup (maple syrup is another story). I decided to try making German pancakes. These are more crepe like (without the flipping) in that they have more egg in it but they are thicker. They act like a popover, when in the oven. They will rise up really high and then deflate. The best part is that when they do deflate, they leave a nice little cup.Β  Perfect for filling! I filled mine with spinach and broccoli egg whites and bananas. The banana ones were my personal favorite πŸ™‚ Overall, a successful breakfast!

Mini German Pancakes filled with eggs or bananas

Ingredients:

1/2 cup of milk

1/2 cup of flour

3 eggs

2 tablespoons of melted butter

1/8 teaspoon of salt

1/2 tablespoon of sugar (omit if just making savory pancakes)

1/2 teaspoon of vanilla (omit if just making savory pancakes)

Directions:

  1. Preheat oven to 400 F
  2. Combine all ingredients in a blender and blend away!
  3. Grease a muffin tray (or mini loaf pan tray) with cooking spray.
  4. Pour batter into each mold, about 1/4 to 1/3 up. Keep in mind that these pancakes will rise up high.
  5. Make for 15 minutes
  6. While pancakes are baking, make whatever fillings you wish to serve: apple/cinnamon sauce, chocolate, bananas, eggs etc.
  7. Once you remove the pancakes from the oven, they will deflate and then you can fill them

    Will be making these soon. Do I need metal tins for them to cook properly?

    • Nope πŸ™‚ you can use cup cake pans if you have them. You can make a big one, is you have those round baking pans or an oven safe skillet. Have fun!

    • lol πŸ™‚ Yup. I am thinking next time, I need to put nutella in it (and sweeten the pancake) and have a yummy dessert with a side of ice cream πŸ™‚

  4. I totally understand what you’re saying. I don’t have pancakes a lot because they are heavy. But I may have to try German pancakes really soon because these look delicious. Love the filling and the spinach

    • I definitely agree πŸ™‚ But sometimes just eating plain pancakes for me is a bit boring πŸ™‚ But I think a stack of pancakes with maple syrup and bananas are a definite great breakfast πŸ™‚

    • LOL When I eat pancakes, there is usually no room for anything else and I love variety at breakfast. My solution..silver dollar pancakes, so I can have other things as well πŸ™‚
