Muffins are probably one of my favorite breakfast treats. Corn muffins especially, drizzled with honey and served with a cup of tea is probably one of the BEST ways to get me motivated in the morning. Muffins in general, are very easy and quick to make, so I don’t have a very long wait, for this tasty treat. I hope you enjoy this recipe as much as I do.
Ingredients:
1 cup of all-purpose flour
1/2 cup of cornmeal
1/4 cup of sugar
1 1/2 teaspoon of baking powder
1/4 teaspoon of salt
2 eggs
1/4 cup of milk
1/2 cup (1 stick) of butter, melted
Directions:
- Preheat oven to 350 F
- Grease a muffin pan with cooking spray
- Combine all ingredients in the blender (or mix in a bowl..either way)
- Pour batter into muffin pan.
- Bake for 15-20 minutes or until knife comes out clean.
