Hello Friends! Sorry posts are so far an in between! Today is one of my other favorite days of the year. Pi Day! I love making pies and I usually try to make a pie on this day. Last year, I did a chicken pot pie, so this year, I thought I would do something sweeter. It has been a very busy few weeks and I haven’t been able to go grocery shopping so I was limited as to what I have in my kitchen. So, I went pantry shopping! Turns out I had all the ingredients I needed to make Oatmeal Pie. This pie has been on my To Do List for a long while. It is kind of like a mock pecan pie and it is amazing. I only wish I had some Butter Pecan Ice Cream to put on top.
Ingredients
4 eggs
2 tablespoons flour
1 teaspoon cinnamon
1/4 teaspoon salt
1 cup light corn syrup
1/4 cup melted butter (unsalted)
1 teaspoon vanilla
1 cup quick cook oats (plus extra for decorating)
1 Pie crust
- Preheat oven to 350 F
- Beat eggs until frothy
- Add remaining ingredients and mix well
- Pour batter into pie crust
- Sprinkle the top of the pie with extra oats.
- Bake for 45-55 minutes until center is set but still jiggles
- Let it cool completely before slicing
Serve with your favorite ice cream (Suggestion: Butter Pecan)
