I had been making a lot of breads in the last week and slowly, my husband and I have been eating them. When I looked in my fridge today, I noticed I just had two of my Homemade Flour Tortillas and half of a Homemade Hoagie Roll left. It was just enough to make a nice lunch for my husband and myself, this snowy Wednesday. Fortunately, yesterday I went grocery shopping and I had purchased some Deli Turkey (on Sale!). However, I was not in the mood for a cold sandwich. So, after some thought, I decided to spice things up.
What I ended with was a hot Turkey sandwich filling with a bit of a sweet kick from caramelized onions and some warmth and spice from cumin and chili powder. With this I made two Quesadillas and half a sandwich. This recipe is a definite keeper for me. I want to try making them into panninis and wraps next (Ohh..maybe with a Spinach Wrap..YUM!). Enjoy!
Ingredients:
1 cup of diced, thick sliced turkey (you can use leftover meats or chicken as well)
2 medium onions, sliced thinly
2 tablespoons of butter
1 tablespoon of sugar
1/2 teaspoons of garlic powder
1 teaspoon of cumin powder
1 teaspoon of chili powder
1/2 teaspoon of salt
Shredded Mozzarella cheese
Directions:
- Saute butter, sugar and onions until onions are browned and caramelized (Sugar will speed up the caramelizing process) on Medium High Heat.
- Add turkey and spices and cook until everything is combined and heated through
- Place filling on bread or tortilla and sprinkle with mozzarella cheese and heat on frying pan until bread/tortilla is toasted on both sides and cheese melts.
