One might say, I made this dish, really as an excuse to make more bread (I love making bread-Click here for Homemade Hoagie Rolls). In reality, the ingredients where there and waiting for me to make this dish. Sausage Peppers and Onions are a perfect example of feeling like going to a ballpark, watching a game and enjoying the food. The first time I ever really enjoyed Sausage Peppers and Onions was when I went with my father, sister and my now husband to watch a baseball game. I can’t tell you who was playing, what the score was nor do I remember what baseball stadium I was at, but I certainly remember the taste of stadium food.
Normally, I would reserve a dish like this for summer time, when this could be cooked outdoors, on a grill. Owing to quite a few snow storms, I felt that we should have a little summer, during our winter. Simple but delicious, I hope you enjoy.
