Chicken Pesto Pasta

When I planning my wedding earlier last year, one of my bridesmaids and I traveled around my parent’s home looking for a perfect venue for one of the festivities. It was getting really late and we were having so much fun, that we did not want to end our night so early. So we went to West Nyack, NY and had dinner at Temptations Cafe, one of the most popular haunts of us locals. I have long memories of that cafe. My friends and I used to go there often for really great meals and most important WONDERFUL desserts. I always loved sitting in the back to see their eclectic artwork.

We decided that we both were not terribly hungry so my friend and I decided to share their special of the evening. It was a Chicken Pesto Pasta with sliced carrots and zucchini. They served it with some garlic bread. My mouth waters whenever I think of it. Of course, I had to replicate it. It has since been a very favorite comfort food for me.

Ingredients:

Almond Pesto (To your taste)

2 zucchini, sliced

2 carrots, sliced

1/2 lbs Whole Grain Penne Pasta, cooked

1 cup of baby spinach

1 lbs of chicken,

(diced and seasoned with salt, pepper, onion powder and garlic powder)

Directions:

  1. Saute chicken until cooked and then add zucchini and carrots until they are cooked.
  2. Add pasta, spinach and pesto (you can add as little or as much as you would like)
  3. Heat through and serve with Parmesan cheese on the side

I served mine with a loaf of Homemade French Bread
