I remember one of the first times, I had made brownies for my boyfriend (now husband) and his then roommate. I was visiting and decided to give these guys a nice home cooked meal. They both were very willing to help. I set one, helping with the entrée and the other, helping with dessert. That day, I was making brownies. I had just recently come back from Belize (I was living there for 8 months, while in medical school) and this recipe was given to me, by one of my Belizean neighbors. So, as I was looking over my ingredient list, the first thing, my husband’s roommate asks me is “So, where is the brownie mix box?” Box Mix?! I remembered the surprise on his face, when I told him, we were making the brownies from scratch. Ahh memories. This recipe, is an adapted version of that brownie recipe.
Ingredients For Brownies:
3/4 cup of cocoa powder
1 teaspoon of baking soda
2/3 cup of vegetable oil
1/2 cup of boiling water
1 1/2 cups of sugar
1 1/2 cups of flour
1 teaspoon of salt
2 eggs
10 oreo cookies, crumbled
Directions:
- Preheat oven to 350F
- Combine cocoa powder, baking soda and vegetable oil.
- Stir in boiling water (mixture with thicken)
- Stir in remaining ingredients
- Pour into a lightly greased baking pan
- Bake for 35 minutes
- Allow brownies to cool
These brownies are good to go now, but if you want to get fancy:
Fresh Buttercream
2 tablespoons of butter, softened
3/4 cup + 2 tablespoons of confectioner’s sugar
1/2 teaspoon of vanilla extract
milk
Directions:
- Combine butter, sugar and vanilla extract
- Add just enough milk to allow the frosting to be piped
- Place a sandwich bag in a glass, with a piping tip at one corner and the open sides folded over glass
- Fill bag with frosting and remove air from bag and seal
- Pipe decoration
I used a biscuit cutter to cut out my brownies and decorated it with buttercream and an oreo.
